Made with rye flour and wheat flour, this coarse, dark bread dough has a slightly sour taste. Suitable for bakeries, cafes, and restaurants, this bulk case contains 24 Rich bread loaves.

A coarse dark bread with a slightly sour taste made with high proportion of rye flour and a small amount of wheat flour. Proof-and-bake format.

Preparation instruction: 1. PLACE UP TO 12 LOAVES ON A LINED SHEET PAN, COVER WITH PLASTIC AND RETARD OVERNIGHT 2. REMOVE FROM RETARDER AND LET STAND FOR AT LEAST 15 MINUTES. 3. MOLD LOAVES TO POINTED ENDS, MAKING SURE BOTTOM IS SEALED WELL. 4. PLACE 4 LOAVES ON LINED SHEET PAN OR USE SCREEN PANS, MAKING SURE SEAMIS DOWN. 5. EGG WASH BREADS, IF DESIRED. 6. PLACE IN PROOF BOX AND PROOF UNTIL DOUBLE IN SIZE. 7. SLIT EACH LOAF WITH 3 DIAGONAL CUTS. 8. BAKE AT 400 F FOR APPROXIMATELY 30 - 35 MINUTES. 9. REMOVE FROM OVEN AND COOL ON WIRE RACKS.
