Dalia is chana dal, husked, split, and roasted. It is commonly used as a thickener with chutneys such as coriander chutney. They are extensively used in South Indian cooking from everything from condiments to curries. Roasted chana dal or Bengal gram is also called Daria dal or bhuna chana dal or dalia.
